Come to the Cook
While visiting Young's General Store in Middle River this weekend, I saw a ton of fresh asparagus! I chatted with Mark, and it sounds like asparagus will be available the next few weeks! Here is one of my favorite breakfast recipes using fresh asparagus!
Asparagus Frittata
• 6-8 ounces trimmed green asparagus (you are safe to cut off at least 2 inches of the bottom of the asparagus which can be very woody)
• 1 cup thinly sliced new potatoes (the thinner they are sliced, the crispier they will be)
• 1/2 cup red pepper diced
• 2-3 T Olive oil
• 1 onion, cut in half and thinly sliced
